Save the family recipe, including the details nobody writes down

A new book launched during Global Food Week documents 76 Emirati recipes in Arabic and English. Emirati Cuisine: A Culinary Memory. A Timeless Heritage was announced on 8 October by the Sheikh Mansour bin Zayed Agricultural Excellence Award. Its development involved the Abu Dhabi Heritage Authority, the National Library and Archives, chefs and heritage specialists.
The announcement connects the recipes with their preparation and cultural context. It also says the book will be available for sale, but gives no price or retail link. Check the publisher’s official information before making a special trip to buy it. The guide below is an independent household project inspired by the news; it does not reproduce the book’s recipes.
Start with one dish and the person who knows it best. Ask permission to record the conversation and agree whether their name, voice or photographs may be shared. Write down what the dish is called in the family, who taught it to them and when they usually make it. Keep a remembered story attributed to its teller rather than presenting it as a universal history.
Record one actual cooking session. Note ingredient quantities, the number of portions, the pan used and the order in which ingredients go in. When the cook says “a little”, measure that particular amount if they are comfortable doing so. Keep their phrase beside the measurement: it captures a habit while giving the next cook something usable.
Pay attention to the cues between steps. What should the mixture look like before the next ingredient goes in? What tells the cook that a stage is finished? A photograph taken with permission can explain a texture more clearly than a guessed minute count. Distinguish the method observed from substitutions someone suggests for another day.
Then let another family member follow the notes while the original cook is available to clarify. Mark the confusing steps, revise the document and date the version. Save a copy that can be printed as well as a digital file. The useful test is simple: can somebody else cook from it without a running commentary from across the kitchen?
